Garlic Chilli Chutney recipe with step by step
This chutney made with spicy dry red chillies, garlic cloves, ginger and some spices,
It is vey famous,tasty, delicious and easy to make.
This chutney can be served with almost every dish like Bread, Chapati, Bhakri, Paratha, Dosa, Bhel, Khichadi.It stays long and cab be store in a refrigerator also.

ही चटणी मसालेदार कोरडी लाल तिखट, लसूण पाकळ्या, आले आणि काही मसाल्यांनी बनलेली,
हे प्रसिद्ध, चवदार, रुचकर आणि बनविणे सोपे आहे.ही चटणी ब्रेड, चपाती, भाकरी, पराठा, डोसा, भेळ, खिचडी अशा जवळजवळ प्रत्येक डिशबरोबर सर्व्ह करता येते.ही चटणी खुप दिवस टिकते आणि फ्रिज मध्ये पण ठेवू शकता.

INGREDIENTS:
15-17 Any Spicy Dry Red Chillies
5-6 Dry Kashmiri Red Chillies
15-17 Garlic Cloves
1 Inch Ginger (Cut Into Pieces)
1 Tsp Cumin Seeds
1 Tsp Salt Or As Per Taste
2 Tbsp Fresh Lemon Juice
4-5 Tbsp Oil
Warm Water to Soak

METHOD :
1.Remove the seeds of both red chillies
You can wear plastic bags Or hand gloves
2.Add both the deseeded red chillies in warm water
Cover and soak them for 30 minutes
3.Once soaked, take out them in a mixer jar
You can use the water to grind
4.Add the garlic cloves, ginger pieces and cumin seeds
Grind it first without water
5.Add the water(2-3 Tbsp) Or as required to grind well
You can grind it fine paste or coarsely
6.Keep aside the coarsed garlic-red chilli paste
7.Heat the oil in a small kadai
8.Once the oil is medium hot,
Add the coarsed garlic- chilli paste in the oil
9.Add the salt
Mix and cook it for 3-4 minutes on low flame
Keep stirring
Once the chutney becomes thick and start to release the oil
10.Add the lemon juice and mix
Cook it again for 2 minutes
11.You can add a pinch of asafoetida and sugar
12.Garlic Red Chilli chutney is ready
Then off the flame
13.Once cooled, store in an air-tight jar
It can be preserved for a long time Or store in a refrigerator
14.It can be served with almost every dish like Bread,
Chapati, Bhakri, Paratha, Dosa, Bhel, Khichadi.

A potato vada wedged between two pieces of bread is a must-have and an on-the-go snack for almost all Mumbaikars!
The Vada Pav is said to be invented by #Ashok Vaidya in the 1960s at #Dadar in the city of #Mumbai

VADA PAV & GARLIC CHUTNEY:
Serves: 2-3
Preparation Time: approx. 45 mins

Ingredients:

Besan- 3 cups
Red chili powder- 1/2 tsp
Turmeric powder- 1/2 tsp
Salt- As per taste
Water- 4 to 5 cups
Oil- 1 tbsp
Mustard seeds- 1 tsp
Cumin seeds- 1tsp
Curry leaves- 5 to 6
Ginger-Garlic- green chili paste- 1 tbsp
Boiled potatoes- 2 cups
turmeric powder- 1/2 tsp
Salt- as per taste
Coriander leaves- 1 tbsp

Lasun chutney:
Oil- 1/2 tbsp
Cumin seeds- 1 tsp
Peeled garlic- 1/2 cup
Dry coconut – 1 cup
Kashmiri chili powder- 1 1/2 tbsp
Salt- as per taste.

Procedure:
Vada Pav-
Take a bowl, add besan, turmeric, red chili powder, salt, water and mix well. Keep the batter slightly thick.
Take a pan, add oil, mustard seeds and cumin seeds. Saute for 30 secs.
Add curry leaves and ginger garlic green chili paste & mix well.
Add boiled potatoes, turmeric powder, salt and coriander leaves. Mix well for 2 mins.
Take a small portion of the above mixture, dip it in besan batter, and deep fry the same.
Serve hot with dry garlic chutney.

Lasun chutney:

Take a pan, add oil & cumin seeds. Mix well.
Add peeled garlic and dry coconut. Saute for 3 to 4 mins.
In a mixer, add the above mixture, Kashmiri chili powder & salt.
Grind it to a fine powder.
Serve the chutney with Vada pav.

वडा पाव:-

सामुग्री:-
१. बेसन – ३ कप
२. लाल तिखट पावडर – १/२ लहान चमचा
३. हळद – १/२ लहान चमचा
४. मीठ – चवीनुसार
५. पाणी – ४ ते ५ कप

६. तेल – १ मोठा चमचा
७. मोहरी – १ लहान चमचा
८. जिरं – १ लहान चमचा
९. कढीपत्ता – ५ ते ६ पानं
१०.आलं – लसूण – मिरची पेस्ट – १ मोठा चमचा
११. उकडलेले बटाटे – २ कप
१२. हळद – १/२ लहान चमचा
१३. मीठ – चवीनुसार
१४. कोथिंबीर – १ मोठा चमचा

१५. तेल – १/२ मोठा चमचा
१६. जिरं – १ लहान चमचा
१७. लसूण – १/२ कप
१८. सुकं खोबर – १ कप
१९. मीठ – चवीनुसार
२०. काश्मिरी लाल तिखट पावडर – १ १/२ मोठा चमचा

२ मिन मिश्रण परतवून घ्यावे.

३ ते ४ मिन मंद आचेवर परतवून घ्यावे.

वडा पाव कृती:-
१. एका बाउल मध्ये बेसन, हळद, लाल तिखट, मीठ, आणि पाणी घालून मिश्रण चांगले एकजीव करून घ्यावे.
२. एका पॅन मध्ये, तेल, मोहरी, आणि जिरे घालावे आणि चांगले १/२ मि. परतून घ्यावे.
३. नंतर त्यात कढीपत्ता आणि आलं-लसूण-मिरचीची पेस्ट घालावी आणि चांगले मिक्स करावे.
४. आता, उकडलेले बटाटे, हळद, मीठ, आणि कोथिंबीर घालून २ मि. परतून घ्यावे.
५. वरील मिश्रणाचे लहान लहान गोळे करून ते बेसनाच्या मिश्रणात बुडवून तेलात सोडावेत आणि छान खरपूस होईस्तोवर भाजावे.
६. गरमागरम वडे, पावासोबत आणि लसूण चटणी सोबत सर्व्ह करावे.

लसूण चटणी कृती:-
१. एका पॅन मध्ये तेल घेऊन त्यात जिरे भाजून घ्यावे.
२. आता त्यात लसूण आणि खोबरं घालून ३ ते ४ मि. परतून घ्यावे.
३. वरील मिश्रण थोडे थंड झाल्यावर मिक्सर मध्ये भरावे.
४. त्यात काश्मिरी लाल तिखट आणि मीठ घालावे आणि मिश्रण बारीक वाटून घ्यावे.
५. लसूण चटणी वडापाव सोबत सर्व्ह करावी.
